Corn Ribs

Welcome to our latest food adventure - Corn Ribs! These delicious, vegan-friendly snacks are the perfect addition to your next BBQ or family dinner.

Here's what you'll need: just two corn on the cob and a handful of pantry staples like non-dairy butter, salt, garlic powder, smoked paprika, black pepper, onion powder, and all-purpose seasoning. We'll also whip up a zesty Vegan Sriracha Mayo for dipping

Now, let's talk about the elephant in the room - cutting the corn. It can be tricky, but we've got you covered. Stand your corn cob vertically with the wider part against the chopping board, then chop in half and quarter those halves. This method helps prevent squashing the kernels or the cob rolling away (and causing any nasty accidents). If this sounds nerve-racking, don't worry! You can also cut the cob in half first, then slice again. Either way, you'll end up with eight delicious pieces per cob.

Ingredients:

Corn Ribs:

  • 2 corn on cob
  • 2 tbsp non-dairy butter, melted
  • 1 tsp smoked paprika
  • 1 tbsp garlic powder
  • 1/4 tsp onion powder
  • 1 tsp all-purpose seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Vegan Sriracha Mayo:

  • 1/2 cup vegan mayonnaise
  • 3 tsp sriracha
  • 2 tsp lime juice
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • pinch black pepper (to taste)
  • Salt (to taste)

Method:

  1. Preheat your oven to 425°F (218°C). Shuck your corn, ensuring all the husk has been removed.

  2. Now, for the most difficult part of the recipe - cutting your corn into riblets. You want to go easy with this part. Stand the corn up vertically, with the wider part against the chopping board. Using a sharp chef's knife, chop the corn vertically. Gradually add pressure to move your knife through the corn to slice in half. If this is too nerve racking, alternatively, you can chop the corn in half, before slicing vertically. 

  3. In a small bowl, mix melted non-dairy butter, smoked paprika, garlic powder, onion powder, all-purpose seasoning, salt, and black pepper. Using a brush, lather the mux liberally to your corn. 

  4. Put the corn ribs to bake for 20 -25 minutes until tender and starting to crisp.

  5. Whilst your corn ribs are baking, prepare the vegan sriracha mayo by mixing all ingredients together.

  6. Allow your corn to cool before serving with Sriracha Mayo.
