Coconut Cajun Tofu Bites


A delightful, flavorful dish perfect for those who love a combination of crispy texture and Cajun spice. This recipe is easy to prepare and can serve as a great appetizer or main dish.

Ingredients:

  • 14 oz (approx. 0.9 lbs or 400g) extra-firm tofu
  • ¾ cup coconut milk
  • 4 tbsp Cajun all-purpose seasoning
  • ½ cup panko breadcrumbs
  • ½ cup desiccated coconut
  • Oil spray

Instructions:

  1. Preheat the oven to 375°F (190°C).

  2. Prepare the Tofu: Drain and press the tofu to remove excess moisture. Cut or pinch it into bite-sized cubes.

  3. Make the Coconut Mixture: In a bowl, mix the coconut milk with 2 tablespoons of Cajun all-purpose seasoning.

  4. Prepare the Coating: In another bowl, combine the panko breadcrumbs, desiccated coconut, and the remaining 2 tablespoons of Cajun all-purpose.

  5. Coat the Tofu: Dip each tofu cube into the coconut milk mixture, ensuring it is well-coated. Next, roll the tofu in the breadcrumb mixture, pressing gently to ensure the coating sticks.

  6. Bake the Tofu: Arrange the coated tofu pieces on a baking tray and spray them lightly with oil. Bake for 20-25 minutes, or until the tofu is golden brown and crispy.

  7. Serve: Remove from the oven and let cool slightly before serving. Enjoy as a snack or main dish with fresh salad and rice or quinoa. This is also super tasty paired your favorite dipping sauce.

  • Crispier Texture: For an even crispier texture, you can double-coat the tofu by repeating the dipping and rolling steps.
