Cajun Tofu Sandwich
Ingredients:
- 7 oz (200g) extra-firm tofu
- 1 red onion, chopped
- 2 tsp olive oil
- 1/2 tbsp cajun all-purpose
- 1/2 tbsp garlic pepper fusion
- 2 tbsp soy sauce
- 1 tsp nutritional yeast
- Handful baby leaf salad
- 1 tsp olive oil
- 1 tsp sumac
- 1 tbsp maple syrup
- Salt and black pepper to taste
- 1 panini, sliced
Instructions:
- Crumble the tofu into a bowl.
- Add 1/2 red onion (chopped) to the bowl with tofu and a dash of oil.
- Add cajun all-purpose seasoning and garlic pepper fusion seasoning to the tofu mixture and mix well.
- Heat a dash of oil in a cast iron pan.
- Add the tofu and onion mixture to the pan. Sauté for a couple of minutes while stirring.
- Add soy sauce and nutritional yeast to the pan. Continue stirring for a couple more minutes before setting aside.
- In a separate bowl, combine baby leaf salad, 1 tsp olive oil, 1/2 red onion (sliced), sumac, and maple syrup. Stir together and set aside.
- Toast the panini, then add the salad mixture on top.
- Top with the tofu mixture, add any sauces of choice, and enjoy!
