Cajun Tofu Sandwich


  • 7 oz (200g) extra-firm tofu
  • 1 red onion, chopped
  • 2 tsp olive oil
  • 1/2 tbsp cajun all-purpose 
  • 1/2 tbsp garlic pepper fusion 
  • 2 tbsp soy sauce
  • 1 tsp nutritional yeast
  • Handful baby leaf salad
  • 1 tsp olive oil
  • 1 tsp sumac
  • 1 tbsp maple syrup
  • Salt and black pepper to taste
  • 1 panini, sliced


  1. Crumble the tofu into a bowl.

  2. Add 1/2 red onion (chopped) to the bowl with tofu and a dash of oil.

  3. Add cajun all-purpose seasoning and garlic pepper fusion seasoning to the tofu mixture and mix well.

  4. Heat a dash of oil in a cast iron pan.

  5. Add the tofu and onion mixture to the pan. Sauté for a couple of minutes while stirring.

  6. Add soy sauce and nutritional yeast to the pan. Continue stirring for a couple more minutes before setting aside.

  7. In a separate bowl, combine baby leaf salad, 1 tsp olive oil, 1/2 red onion (sliced), sumac, and maple syrup. Stir together and set aside.

  8. Toast the panini, then add the salad mixture on top.

  9. Top with the tofu mixture, add any sauces of choice, and enjoy!
