Black Bean Mushroom Tacos & Our New Seasoning Line

To test how good they were, we tried them in this Black Bean Mushroom Taco recipe. Trust us, these tacos weren’t just good, they're uber delicious! Ingredients:
- 2 tbsp olive oil
- 1 red onion, sliced
- 2 cloves garlic, minced
- 1/2 inch ginger
- 1 red pepper, sliced
- 15 oz or 1 can black beans
- 2 tsp Cajun All purpose
- 1 tsp Garlic Pepper Fusion
- 1 tomato, sliced
- 100ml veg Stock
- 1/2 tsp thyme
- 1 tbsp soy sauce
- 1 tsp harissa paste
- 5 oz / 150g oyster mushrooms
- 4 tortilla wraps (can substitute for GF tortillas)
- Sweet Chilli
- Coriander
- Guacamole (made with avocados, onions, coriander, lemon and tomatoes)
Method:
- Heat 1 tbsp olive oil in a saucepan pan over medium heat.
- Add chopped onion, garlic, peppers, ginger, and garlic. Sauté them in the pan until they're soft.
- Add the black beans and cook until they're heated through.
- Add Cajun All Purpose, Garlic Pepper Fusion, a chopped tomato, and some veg stock. Let the mixture simmer for a few minutes to let the flavors meld together.
- Stir in a touch of thyme, soy sauce and harissa paste. Cook for a few more minutes.
- In a bowl add oyster mushrooms, oil and season and with Cajun All Purpose, Garlic Pepper Fusion.
- Heat a dash of olive oil in a cast iron pan over medium heat.
- Add seasoned oyster mushrooms to the pan and press them whilst they sauté.
- Toast or warm up the tortillas.
- Fill the tortillas with the black bean mixture and mushrooms. Top with sweet chili, chopped coriander, and guac.
