Coconut Cajun Tofu Bites

Ingredients:
- 14 oz (approx. 0.9 lbs or 400g) extra-firm tofu
- ¾ cup coconut milk
- 4 tbsp Cajun all-purpose seasoning
- ½ cup panko breadcrumbs
- ½ cup desiccated coconut
- Oil spray

Preheat the oven to 375°F (190°C).

Prepare the Tofu: Drain and press the tofu to remove excess moisture. Cut or pinch it into bite-sized cubes.

Make the Coconut Mixture: In a bowl, mix the coconut milk with 2 tablespoons of Cajun all-purpose seasoning.

Prepare the Coating: In another bowl, combine the panko breadcrumbs, desiccated coconut, and the remaining 2 tablespoons of Cajun all-purpose.

Coat the Tofu: Dip each tofu cube into the coconut milk mixture, ensuring it is well-coated. Next, roll the tofu in the breadcrumb mixture, pressing gently to ensure the coating sticks.

Bake the Tofu: Arrange the coated tofu pieces on a baking tray and spray them lightly with oil. Bake for 20-25 minutes, or until the tofu is golden brown and crispy.
